I LOVE to bake and I LOVE sweet stuff (we all love a bit of sweet stuff sometimes!) but sometimes I either don’t have the time or the energy. Sometimes I want to buy special treats from someone I trust. If you’re gluten-free and vegan finding that someone special and someone you trust is sometimes pretty tricky. Especially if you live somewhere a little bit… quieter.
Rachel’s Cake Delights

I’d seen Rachel’s Cake Delights pop up on social media and they asked me to try a few ‘delights’. As a lover of all things sweet I was happy to oblige!!!
I got a very, very cute box of delights with two chocolate brownies, three chocolate chip cookies and two flap jacks. You can see how cute the presentation is. I’m a sucker for chocolate chip anything so I was a pretty happy bunny.
The chocolate brownies were dark, rich, crispy on the outside and moist in the middle. Perfect with a cup of tea.
I love a cookie and these beauties were crisp, light, crunchy and packed full of chocolate chips. I also ate these with a cup of tea (can you see a theme emerging?).
And, my favourites (to my surprise) were the flapjacks. Flapjacks remind me of being very young and baking with my Brownie troop (I never lasted long enough to make anything else, I wasn’t cut out for the Brownies). Baking rich, chewy, tasty flapjacks is a very strong memory. Rachel’s flapjacks were just that; rich, chewy, slightly crisp at the edges and full of flavour. I had another cup of tea with these.
The flapjacks saw me through a food emergency at work (no breakfast and no time) and the brownies saw me through a dinner party (brownies with ice cream).
