Say hello Autumn with this delicious, seasonal Briam recipe. I had a wonderful late summer holiday to Greece and one of the naturally vegan, gluten free dishes I enjoyed there was Briam – which makes use of fabulous autumn vegetables; courgette, aubergine, potatoes.
Autumn officially arrived at the end of September and following some late sunshine the season is now definitely upon us. The leaves on the trees are changing colour and dropping to the ground and you need to put on an extra layer (or two) of clothes. The great thing that autumn brings is the glut of fruit and vegetables. From apples and pears to courgette and squash. Fruit and vegetables are full of flavour from the nourishment provided by the summer sun and versatile too – they store great and there are multiple ways to use autumn produce in seasonal cooking.
