My Five Favourite Gluten-Free, Vegan Spring Salads – When Did Spring Start?
We are most definitely in spring and fruit and veg is starting to become more readily available but when did spring start??? There are two different definitions of spring; astronomical and meteorological.
Astronomical Seasons
The astronomical spring begins on 20 March 2018 and ends on 21 June 2018. The Spring Equinox occurs on 20 March and is when the day and night are of equal length. From 20 March the days become longer than the nights… The next time the day and night are of equal length is the Summer Solstice.
The Meteorological Seasons
The meteorological seasons are split in to four periods made up of three months each. The seasons are split according to our Gregorian calendar. This makes it easier for the statistical comparison of monthly and seasonal meteorological observing and forecasting.
The meteorological seasons are
- Spring (March, April, May)
- Summer (June, July, August)
- Autumn (September, October, November)
- Winter (December, January, February).
My Five Favourite Gluten-Free, Vegan Spring Salads
I ADORE salads. Even if it is not too warm outside, as long as it’s not raining, I love to eat outside. It feels great. I wrap myself in a blanket and listen to the birds and watch the sun go down over the houses. There is so much produce available in spring, which makes it super easy to make lots, and lots of seasonal salads.
My Five Favourite Gluten-Free, Vegan Spring Salads – Radish and Cress Salad
Radish and Cress Salad is unbelievably simple but don’t let that put you off. The mustardy flavour of cress and radish with a light and fresh dressing is wonderful. This salad goes with almost anything. I love radishes and cress so much.

For a fancy dinner party salad that looks amazing but takes just a few minutes to put together Celeriac Caper and Rocket Salad hits that spot. Just fabulous as a starter or a side.

There is some very early spring fennel available and if you can get this I heartily recommend Fennel, Radish and Orange Salad. Fresh, light and zesty. Wonderful burst of colour and flavour.
