Apple and Date Overnight Oats are fabulous. This recipe is a great way to get to eat unctuous fruit, for breakfast, in the winter, that hasn’t flown half way around the world. Dried fruit is amazing, it’s much underused. Dried apple is like squashy, foamy sweets I used to eat as a child. You can of course dry your own apples… And dried dates! WOW! The addition of dried dates make this really rich and caramelly. You definitely don’t need a sweetener with this yum-fest of a breakfast. Delicious.

Top Tips – Apple and Date Overnight Oats
You can use your preferred unsweetened plant-based milk. (Take any allergies or preferences into account.) My personal favourites are soya and almond milks.
I often make individual portions (by dividing the recipe by four) and make it in jam jars so I can take it with me when I need to dash out of the house in a hurry!
As this recipe uses dried fruit, I recommend leaving the mixture in the fridge overnight before eating.

Recipe – Apple and Date Overnight Oats

Preparation time 5 minutes (excluding soaking time)
Cooking time 0 minutes
Ingredients – Apple and Date Overnight Oats
60 grams gluten-free oats
450 millilitres vegan milk (unsweetened)
60 grams dried apples
60 grams dried pitted dates
1 teaspoon ground cinnamon
Juice and zest of 1 lemon
Method – Apple and Date Overnight Oats
1. Roughly chop the dried apples and pitted dates in to very small chunks
2. Place all the ingredients into a suitable container with a lid. Mix well and place in the fridge overnight
3. Remove from the fridge the next morning, mix well. Serve.
