Almonds and banana add great flavour and texture and the colour and flavour from the greens (cabbage!) is amazing. Apples give flavour and a little bit of acidity. *For soya free, use a plant milk that isn’t soya based.
Top Tips – Apple and Greens Super Smoothie
It would be ideal if you can leave this in the fridge overnight before making. Otherwise soaking for a minimum of 40 minutes works well.
I used savoy cabbage in this recipe but you can use whatever greens are in season where you are, spring cabbage, savoy cabbage and kale all work well. The greener, the better!
All plant milks work really well here – soya, almond, hemp… All delicious! Just make sure the plant milk you choose works with any allergies or intolerances.

Recipe – Apple and Greens Super Smoothie

Preparation time 10 minutes (excluding soaking time)
Cooking time 0 minutes
Ingredients – Apple and Greens Super Smoothie
60 grams gluten-free oats
450 millilitres unsweetened plant milk
60 grams almonds
2 bananas
2 apples
100 grams seasonal cabbage
Juice and zest of 1 lemon
Method – Apple and Greens Super Smoothie
1. Place the oats, plant milk and almonds into a container and leave in the fridge for a minimum of 40 minutes – preferably overnight
2. Using an immersion blender whizz the oats, almonds plant milk and all the other ingredients until smooth and creamy
3. Pour in to glasses and serve.
