Fragrant Almond, Blueberry and Quinoa Salad is the ultimate summer salad. Gluten-free vegan, light and rich with fragrant flavours and wonderful textures. Inspired by tabbouleh this salad uses the spice blend baharat which works to well with the herbs, fruit and nuts. This is a summer salad to enjoy in the warm afternoon sunshine with a glass of chilled white wine.
This wonderful salad is great on its own but if you want a side how about… Gluten-Free, Vegan Flatbread. Fragrant, Almond, Blueberry And Quinoa Salad is gluten-free and vegan as well as… low FODMAP*, celery free, coconut free, garlic free, lupin free, mustard free, nightshade free**, onion free, peanut free, sesame free, soya free.
*For low FODMAP, remember that one serving of up to 10 almonds (around 12 grams) is low FODMAP. Less than 28 grams (around 20) blueberries is considered low FODMAP. One serving of this salad contains less than 28 grams of blueberries and 12 grams of
almonds.
**For nightshade free check the baharat spice blend for nightshade ingredients. You could make your own spice blend if this is an issue.
Top Tips – Fragrant Almond, Blueberry and Quinoa Salad
Quinoa seems pretty expensive at the moment. You can also make this salad with other gluten-free grains. Millet is my favourite. I love millet in this salad in place of quinoa.
Baharat spice blend can be bought in most supermarkets. It is an aromatic, peppery spice blend containing; paprika, coriander, black pepper, cumin, cinnamon, cayenne pepper, cloves, nutmeg, cardamom. It’s used in middle Eastern inspired cooking.

Recipe – Fragrant Almond, Blueberry and Quinoa Salad
Difficulty easy
Serves 4-6
Preparation time 20 minutes
Cooking time 10 minutes
Ingredients – Fragrant Almond, Blueberry and Quinoa Salad
150 grams quinoa (cooked following this method with 1 teaspoon of baharat added to the stock)
2 teaspoons baharat spice blend* (for nightshade free check this ingredient)
30 grams parsley
10 grams mint
20 grams flaked almonds
60 grams blueberries
4 tablespoons extra virgin olive oil
3 tablespoons lemon juice
0.5 teaspoon sea salt flakes
0.5 teaspoon black pepper
Method – Fragrant Almond, Blueberry and Quinoa Salad
1. Cook the quinoa following this method with 1 teaspoon of baharat added to the stock. Set aside to cool
2. Sprinkle the remaining teaspoon of baharat over the cooled quinoa. Finely shred the parsley and mint and add to the cooled quinoa and mix well. Add the flaked almonds and blueberries and gently mix to ensure all the ingredients are uniformly distributed
3. Drizzle the salad with olive oil and lemon juice and sprinkle the sea salt flakes and freshly ground black pepper. Carefully mix
4. Serve.
