This is one recipe that does not include seasonal produce. Avocados do not grow in the UK, they are air-freighted in and so I don’t buy them very often. Avocados are full of great oils and (when ripe) taste wonderful. I am not perfect! I eat unseasonal, unsustainable avocados, sometimes.

Guacamole is one of those dishes that everyone has a favourite (correct!) way of preparing. So here are the options for you to get it just right…
Avocados: there is nothing worse than unripe avocados. They taste horrible!!! Try to buy them ripe and get them home undamaged – or buy unripe and ripen at home (in a brown bag with a banana!).
Texture: I like Guacamole to have texture and so I do not mash it to within an inch of its life. You can, if you like, pulverise it to a smooth texture in a food processor.
Heat: some people don’t like heat and some LOVE it. Add as much or as little chilli as you like but be careful not to overpower the avocado.
Coriander. Some people detest coriander (in the same way I detest grapefruit I should imagine!) if you don’t like coriander don’t add it.

Ingredients – Guacamole – Onion Free, Garlic Free, Tomato Free
2 ripe avocados
1 medium mild chilli, finely chopped (or to your taste!)
40 grams fresh coriander, chopped
Juice of half a lime
Sea salt flakes, to taste
Method – Guacamole – Onion Free, Garlic Free, Tomato Free
1. Stone and peel the avocados, place in a bowl and mash lightly with a fork
2. In a pestle and mortar, pound the chillies, coriander, salt and lime juice to a fine paste
3. Mix the mashed avocado with the pounded herbs and spices and place in a serving dish
4. Serve with gluten-free, vegan tortilla chips for a fantastic snack.
