Squash are amazing and plentiful at this time of year and it is a shame just to use them as decoration – they do look fabulous but when they start to lose a bit of pizzazz you start to wish you had just eaten them.
Especially when it is so easy to make Roasted Squash – which really is the only way to cook squash. Boiled squash is not very good – it tastes like ‘off’ water whatever you dress it with. Even if you are making squash soup please roast the squash first.
The preparation for roasted squash is quick and easy and once you put the squash in the oven you leave it (for 50 minutes)! Enough time to do something else you enjoy.
