What Is Pancake Day???
Pancake Day (AKA Shrove Tuesday and Mardi Gras) is the day before Ash Wednesday (which is the first day of Lent). The actual date of this moveable feast is determined by Easter. The term ‘Shrove Tuesday’ comes from the word shrive, meaning ‘absolve’.
Shrove Tuesday is a Christian feast celebrated by eating pancakes in some parts of the world and with carnivals in others (Mardi Gras AKA fat Tuesday). However, although it is a Christian festival it is culturally celebrated by many people of all religions and none – by eating pancakes.
There are two explanations commonly given to explain why we eat pancakes on Shrove Tuesday. The first is that there was a feast the day before lent to eat all those things that could not be eaten during lent. The second is that going into lent meant that all the goodies had to be eaten before lent started as they would not last the lent period (around 40 days). I think that both of those explanations are true.

Now, what I think of a pancake you may think of as a crepe and what you think of as a pancake I might think of as something else altogether. Pancakes to me are thin and bubble in the pan. They can be sweet or savoury. They are light and airy and you can probably eat quite a lot of them in one sitting.
This Super Easy Two Ingredient Pancake Recipe For Pancake Day is amazingly quick, easy and no-nonsense. The two ingredients are buckwheat flour and salt (and water but do we call that an ingredient?). If you can make the batter the day before, even better. Spending the night in the fridge allows the flour to just ferment a tiny bit an make the batter a touch easier to handle. If you don’t have time to leave the batter in the fridge (or forgot) don’t worry. The result will be great either way.

The traditional way to serve pancakes (at least here in the UK) is to sprinkle them with sugar and lemon. Now, I know this is popular, but it is not for me. I prefer chocolate and hazelnut spread (see main pic). This works amazingly well. It’s an eat it until it’s coming out of your ears type pancake combo. If you are really decadent you can fill you pancakes with Lavender Ice Cream AND chocolate spread. That would be off-the-scale amazing but a once a year type thing…
Sweet is good (chocolate sauce!) but I LOVE savoury pancake fillings. You can make a creamy mushroom filling, which would be amazing, or you could go all out… How about using the pancakes instead of wraps in Black Bean and Kale Enchiladas??? I have tried this and it is amazing.
If you are loving the savoury pancake idea, you will definitely adore pancakes filled with Gluten-Free, Vegan Haggis and salad (and maybe some brown sauce!). Just make the haggis and the pancakes, place some haggis on the pancake (and salad and sauce) and roll it up!!! Really, really (really) great.
