Jerusalem artichokes are everywhere at the moment. Super seasonal. The are funny looking things (not to be confused with the totally different globe artichokes) that have quite a (windy) reputation. The do have a fantastic texture that lends itself very well to soup. My Jerusalem Artichoke and Sweet Potato Soup is a wonderful winter dish.
